Mock Egg Salad
Ingredients
- 1 block extra firm tofu
- 1/4 tsb black pepper
- 1/4 tsb tumeric
- 1/4 tsb dijon mustard
- 1 tsb salt
- 1 pickle
- 1 bunch of micro chives
- 3 tbsp of parsley
- 2 stalks of celery
- 1 tbsp roasted tahini
- 1 carrot
Instructions
- Finely dice parsley, chives, pickle, celery, and grate carrot.
- Crumble tofu.
- Mix everything together until well distributed.
- Serve cold over toasted sourdough.
